MEXICAN BEEF AND RICE POT.

Hey Guys, as promised though my social media, the recipe from my last week dinner is now available here..:)

INGREDIENTS : Depending on how many people you cooking for i used these for 4 people.

2 Garlic Cloves

1 Bunch Coriander

2 packs of minced beef

1 coffee spoon of tomato puree

150g Balsamic Rice

1 small glass of Red Whine

1 pack of Cheddar cheese

Preparation:

Peel and grate the garlic and roughly chop the coriander (stalks and all)

Heat a splash of oil in a saucepan over a medium heat, when hot add the minced beef and cook until brown roughly 5/6 min. As the beef is cooking slowly break it up. Add in the Garlic and keep steering. Season it with pepper and salt.

Turn the heat to low and add in the Rice, tomato puree, red whine and some water. Bring it to a boil and then cover the saucepan with a lid. Leave to cook for 15 min then remove from the heat with the lid still on while its on the side the rice will continue to cook on its own.

Pre-heat the grill to high temperature. Once the rice is cooked, season to a taste that suits you, stir in 1/2 of the coriander, sprinkle in the cheese and pop it in the grill until the cheese is bubbling and is golden (about 2 mins would do).

Voila la… now tuck in to this amazing Mexican dish! ENJOY!
